Dessert connoisseurs will note that London is somewhat overdue a new food fad. In the last five years whoopee pies, doughnuts, macarons and cupcakes have already been revolutionised, deconstructed and reconstructed. What the city needs is an amalgamation of all of these, in one perplexing but delicious dessert.
Cutter and Squidge know it. Meet the biskie (pronounced bisk-ee). It’s a ‘fresh, unique handmade creation of biscuit/cookie/cake’ filled with buttercream, jam, caramel, or other sweet goodness.
A new pop-up by the creative bakers is in residence in Soho’s Brewer Street until June. Flavours are super on-trend with matcha green tea, white chocolate and raspberry, and s’mores.
How you actually go about taking a bite of it, we don’t know. Good luck eating it in public.
